Manual, delicate work that has remained unchanged for hundreds of years is how coarse sea salt is harvested.

It crystallizes on the surface of special basins called salinas, into which ocean water rushes and is contained. The water, under the influence of the sun and wind, slowly evaporates, and on its surface salty crystals form.

The resulting crystals are collected by hand, without any technological intervention, only with the help of long wooden rakes. As a result, the structure of the salt remains consistent and still perfectly pure and of the highest quality.

The harvesting and processing of sea salt, just as with pepper in Kampot, are handled by individual small farms. Farming families pass down the tradition of sea salt production from generation to generation. The salt is therefore in absolute organic quality, without the need for any subsequent refinement. And just like with pepper, even from these farmers salt we purchase directly, ensuring that for their hard work they receive the proper compensation.

Coarse sea salt can be used for everyday cooking. Season with it, use it when pickling, preserving meat, fish, and vegetables, prepare marinades with it, let the meat rest in a salt crust, or decorate the surface of baked goods with it.

It definitely does not belong in a grinder; simply crush it lightly between your fingers and sprinkle the delicate crystals on the surface.
