Kampot Pepper is grown in Kampot province, located in the far south of East Asian Cambodia.

This is an area which, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It is no coincidence that this pepper has received protected geographical indication, similar to French champagne. We purchase pepper from small family farms under direct trade conditions that guarantee a fair reward for every farmer, and we are trying to promote this approach among other traders as well. Thanks to this, by purchasing from us you obtain not only the highest quality pepper, but also the assurance that you are buying a sustainable and ethically responsible product, which helps ensure its producers medical care and education for their children.

Characteristic

Black pepper, when ground, releases notes of eucalyptus, camphor and thyme, accompanied by the scent of lime zest.

They gradually flow into a direct aroma with developing fruity notes. The dominant aroma is peaches and nectarines, which are accompanied by the scent of pine and the earthy tones of Cambodian mountain soils full of minerals.

Processing

In the case of black pepper, the berries are harvested at the moment when the peppercorns are still green.

Subsequently, they are dried on the intense Cambodian sun, when they acquire their characteristic black color and wrinkled surface.

Thanks to the careful selection that meets the strict quality standards for Kampot-exported pepper, as determined by the Kampot Pepper Association, only the best berries are hand-selected. They are then vacuum-sealed so that quality and freshness are preserved during the journey to the Czech Republic, where they are further sorted, packed, and delivered right to your table.

Usage

Thanks to the different taste, aroma, and spiciness, various types of pepper are suitable for different purposes. Black pepper is a universal ingredient that is unlikely to be lost in any dish.

However, it is ideal to pair it primarily with dark red meat. To perfection, every steak on the grill or in a pan is elevated, yet it also finds its use in classic sauces, soups and it also pairs well with pasta. The more finely you crush Kampot pepper, the more intense the spiciness will be, whereas larger fragments or whole grains will give the dish more distinctive pepper notes.
