Kampot pepper is grown in the Kampot province, located in the far south of Southeast Asian Cambodia.


This region, with its coastal climate and unique geological conditions, allows local farmers to produce some of the highest quality pepper in the world. It’s no coincidence that this pepper has earned a Protected Geographical Indication (PGI) — much like French Champagne.

We purchase our pepper directly from small family farms under direct trade conditions, ensuring fair compensation for every grower. We also promote this ethical approach among other traders.

Characteristics

Red freeze-dried pepper brings the maximum fresh taste of ripe red peppercorns, which we love so much in Cambodia.

Again, expect a peppery taste full of pungency in a very intense and rich form. The taste of red freeze-dried pepper combines fresh notes of fruit with a delicate hint of sea salt.

Processing

This freeze-dried red pepper is the second global innovation we’ve developed after the green freeze-dried Kampot pepper.

It is made from fully ripe red peppercorns, hand-harvested one by one at the end of the season. These rare sweet red Kampot peppercorns are not traditionally sun-dried but undergo freeze-drying. This process removes moisture while preserving the pepper’s freshness. The addition of Kampot salt keeps the peppercorns fresh during transport. Simply add a drop of oil or water to rehydrate them, restoring their original structure and flavor as if freshly picked from the vine.

The result is a pepper much more intense than traditionally dried varieties, offering three flavors – sweet, spicy, and salty – for the first time.

Carefully selected according to the strict quality standards of the Kampot Pepper Association, only the finest fully ripe red peppercorns are chosen. However, this meticulous handpicking process yields a very limited quantity, and the batch is restricted to just 1600 pouches due to the complexity of freeze-drying. This ensures that you receive only the very best of the best in flavor!

Usage

The freeze-dried red pepper from Kampot is suitable for almost everything thanks to its three flavour dimensions.

Every dish is perfectly seasoned with peppery notes, plus a slight sweetness and saltiness. We recommend using it crushed.

It is wonderful on dark meat at summer barbecues, in pepper sauce and for seasoning oven-roasted meats in the home kitchen. It gets along well with seafood, grilled vegetables, as well as with side salads. Its sweetness and a touch of saltiness give it a unique character to enhance homemade cakes, light desserts with fruit and Christmas gingerbread. You can then use whole balls to garnish homemade ice cream, in creative summer mocktails or drinks with quality gin.

Packaging

Thanks to the materials used and the special bag sealing technology, no air or moisture can reach the pepper.

Thanks to this, the beans retain the authentic taste and aroma of Kampot pepper even after opening the bag. In addition, once emptied, the bags can be recycled for sustainability and used in a variety of other ways. We pack the pepper in resealable 20 gram bags.
