Lyophilized red pepper is the second world unique after the green lyophilized Kampot pepper that we have developed.

It is obtained by harvesting fully ripe red Kampot peppercorns,which are picked one by one at the end of the season. The rare grains of sweet red Kampot pepper are not traditionally sun-dried, but undergo a process called lyophilization. During this process, the grains arefreeze-dried, which removes moisture from them.The added Kampot salt keeps the grains fresh even during transport. Once unpacked, a drop of oil or water is enough to restore the moisture, which the freeze-dried peppercorns absorb back, regaining their structure and flavor as if you just picked them from the pepper vine.

The pepper is much more intense in flavor than traditionally dried peppers and containsfor the first time three flavors - sweet, spicy, and salty!

Thanks to careful selection meeting the strict quality requirements of Kampot pepper exported from Kampot, set by the Kampot Pepper Association, only the best and fully ripe red grains are handpicked. However, there are very few of these when picked one by one,and the batch is so limited due to the demanding lyophilization process to only 1600 bags.You will thus receive a taste selection of the best of the best!
